Very Vege Soup

The ingredient of Very Vege Soup

  • 20ml oil
  • 2 onions chopped
  • 5 cloves garlic chopped
  • 3 carrots chopped
  • 2 capsicums chopped any colour or combination
  • 8 tomatoes chopped
  • 1 bunch fresh basil
  • 1 zucchini chopped
  • 1 2 bunch celery chopped
  • 1 tablespoon olive oil
  • 1 cup water
  • 1 cup massel vegetable liquid stock
  • 20ml tomato puree

The Instruction of very vege soup

  • heat oil in a large saucepan and fry onions garlic and carrot until the onions start to soften add all the other vegetables to the pan
  • add the water stock and tomato puree and bring to a simmer cover and check every 10 to 15 minutes
  • after an hour take the lid off and reduce any excess liquid continue to simmer for another half hour once everything is cooked get a stick blender and blend to a smooth consistency
