Brie Stuffed Beef Burgers

- 400g beef mince
- 20g 1 4 cup fresh breadcrumbs made from day old bread
- 2 egg yolks
- 1 brown onion coarsely grated
- 2 tablespoons hp sauce
- 1 teaspoon white sugar
- 2 garlic cloves crushed
- 1 2 cup chopped fresh continental parsley
- 50g brie cut into 4 slices
- olive oil spray
- 4 sourdough bread rolls split
- 2 tablespoons whole egg mayonnaise
- 1 teaspoon wholegrain mustard
- 70g mixed salad leaves
- 2 tomatoes thinly sliced
- bread and butter cucumbers to serve

- place the beef breadcrumbs egg yolks onion hp sauce sugar garlic and parsley in a bowl season with salt and pepper mix until well combined shape the mixture into 4 patties place 1 slice of brie in the centre of each patty shape the patty around the brie to cover completely
- lightly spray a non stick frying pan with oil and heat over medium heat cook the patties for 5 minutes each side or until cooked through
- meanwhile preheat a chargrill on medium lightly spray the cut side of the bread with oil cook bread cut side down for 2 minutes or until golden
- combine mayonnaise and mustard in a small bowl divide the salad leaves among the bread bases top with the patties tomato and mayonnaise mixture top with cucumbers and bread tops
